Actually I know absolutely nothing about drinking wine from a copper based vessel, and can't imagine even doing it. I like wine from glass or crystal and even resist when in paper cups. I will on occasions buy it in those neat plastic bladders in the cardboard boxes, however, for openings or socials when the bulk of the folks that have stopped came for the wine and cheese instead of the artworks.
I too will be watching for a more intellectual answer to your question but have a personal aversion to eating or drinking or even cooking in copper based items. Did you ever suck on a penny? No reason I can pin down, just a twitch in my ear lobes that tells me to personally avoid that. And I do listen to me lobes.
