Hi Charles and Welcome to Artmetal. Your work is stunning. I am unfamiliar with metal carving, is the metal steel or something softer like Copper? Also, what is the difference between metal carving and engraving?

Metal carving often work on different kinds of metals. like brass sheets.
like copper sheet.the carved tsuba here is T8mm thickness copper sheet.
like the steel sheets. the western pattern show here is the one work on the steel sheet.

For the difference between metal carving and engraving? i think,
the difference on the toolings.the engraving more used the something like airgraver chisels. electrical hold. but for the traditional metal carving. it is only used the metal hammer and chisels. full hand hold.

the difference on the pattern and the relief sculpture.you will see it like more three dimensional effect for the carving.

i will post some toolings and secquence later. then you will have an general ideal of it.

FYI:
Traditional Metal Carving Craft become less and less. It used to the accessories for the Body, Home, or Office, like the fittings of the lighting, katana sword weapons" reproduction, Buddhist Altar, Furniture"s, Mural & Plaque, Clocks, Vases, Rings, and precise lost-wax casting mold, was traditionally created with the pure handmade technique of metal chasing, The craft work is made from metal panel, using oxy acetylene flame, graver, chisel and metal hammer. By either sharping, beating, carving, engraving, sculpture on the metal, like brass or steel, in order to emboss the custom image into the copper sheet. It is an exquisite hand work. which is unique & permanent, so traditional carving is different from other decorative techniques in the sharpness of the lines and its permanence. Machine engraving cannot cut as deeply as the hand technique. Stamping and etching are sometimes confused with hand engraving, but the result is not as sharp. Lasers and die cutting can also be used to cut into metal but the results look machined rather than finely crafted. Please click below box for more details about the item.

No, I don't own any tsubai. I just admire the fine craftsmanship that has gone into many of them over the centuries and your work is completely the equal of any that I have seen anywhere.
